MODIFIKASI MESIN PEMOTONG KERIPIK UNTUK MENINGKATKAN PRODUKTIVITAS DAN KUALITAS PRODUKSI PADA UKM DI KEPULAUAN BANGKA BELITUNG

The small and medium enterprise (SME) sector in tuber chip processing in Bangka Belitung Islands Province holds significant economic potential yet is constrained by conventional production processes, particularly at the cutting stage. This study applies an applied-engineering design method carried out systematically through five stages: problem identification, existing-machine analysis, design and technical calculation, fabrication, and field testing, to modify a chip-cutting machine and thereby improve slice uniformity, production capacity, and food safety compliance. Modifications include replacing the drive system with a 0.5–1 HP single-phase electric motor, optimising a V-belt and pulley transmission, and redesigning the blade mechanism using food-grade stainless steel SS 304. The frame was upgraded using 40×40×3.8 mm angle iron. Technical calculations show the required motor power is 0.037 kW with a blade shaft speed of 485 RPM from a transmission ratio of 1:2.9. The modified machine increases production capacity from 5 kg/h to 10 kg/h with slice thickness variation not exceeding ±1.5 mm.
