Abstract

Indonesia is famous for its abundance of cassava plants, especially in the Bangka Belitung Islands. Cassava is used by the community as a substitute for high carbohydrate sources in some areas, including Bangka Belitung Province. The abundance of cassava in the Bangka Belitung region has prompted MSMEs and cottage industries to innovate in processing cassava, namely boiled cassava into specialty foods, such as Belitung pempek menggale and papaya-filled croquettes, which are typical Bangka snacks. One of the household businesses in Bangka regency, Sungailiat district, Matras village area is Mrs. Asmara's papaya stuffed cassava croquette. In the processing process, the business still uses manual tools and diesel-powered grinding machines with inefficient quality for the home industry. This greatly affects the productivity of Mrs. Asmara's croquette business. This study aims to design and manufacture a boiled cassava grinding machine with a capacity of 2 kg/minute. The method of research and design of boiled cassava grinding machine is guided by the VDI 2222 method, which includes the stages of planning, conceptualization, design and completion. According to this method, a boiled cassava grinding machine is formed with a rotary screw auger grinding system, the motor drive mechanism uses a 0.25 HP electric motor, and the motor drive transmission system uses pulleys and belts. The trial of the boiled cassava grinding machine was carried out 3 times the grinding process, namely 2 kg of boiled cassava in 1 machine trial process.
