Abstract

Emping is a type of Indonesian snack or snack in the form of crackers made from melinjo seeds or belinjo (Gnetum gnemon). Emping has a slightly bitter taste. 1] Emping is available in the market in various flavors, such as plain (original), salty, spicy, or sweet, depending on the addition of salt or caramel sugar. As for the process of making emping, traditionally there are several stages. Initially, the melinjo seeds are peeled from the skin first and then put in an earth/iron pan that has been filled with fine sand, then put on the fire, wait approximately 5 minutes(according to the size/temperature of the fire) then separate the seeds inside with the hard skin of melinjo, then overwritten on flat and slippery wood so that it is easy to move after the removal process is carried out, then dried in direct sunlight to dry quickly.
