Abstract

The increasing demand for crispy chicken products requires business actors to enhance production capacity while maintaining the quality of chicken cuts. The cutting process, which is still performed manually, has several drawbacks, including relatively long processing time, inconsistent cut results, as well as the risk of fatigue and work accidents for operators. This study aims to design an electrically driven chicken cutting machine that can improve the efficiency of crispy chicken production. The method used, VDI 2222, includes data collection, concept creation, designing, and completion. The design process is carried out by considering aspects of function, safety, ergonomics, ease of maintenance, and the needs of SMEs. The design results show that the machine is designed using a 1 HP electric motor as the main drive with a cutting system in the form of a 230 mm diameter circular knife. The test results show that the machine is capable of cutting a 1.5 kg chicken into six pieces within 25 seconds, with an actual capacity reaching 180 kg/hour. The actual capacity achieved is approximately 90% of the design capacity. This difference is influenced by several operational factors that were not accounted for. The machine produces relatively uniform cuts, accelerates the cutting process, and reduces the operator's workload. Thus, this chicken cutting machine can serve as an appropriate technology solution that supports increased productivity in the crispy chicken business.
