Abstract

Pempek is made from a mixture of ground fish, tapioca, water and other spices which are usually served with vinegar or vinegar. In the manufacturing process, the community and small and medium MSMEs still use manual tools and labor. However, for the production process of more pempek, more time and labor are needed. From these problems, the idea emerged to design a pempek dough mixer machine to help the process of stirring pempek dough with a capacity of 5 kg. The method used in the design of this machine uses VDI 2222. This method has 4 (four) stages, namely analysis, conceptualization, design, and completion. From this conceptual stage, an alternative part is produced. Alternative parts functions are then assessed to determine alternative parts used in the design of the machine. From the method used, an analysis of the calculation and movement of the engine with a rotation of 1500 Rpm was obtained.
